The Académie Culinaire de France USA & Canada Delegation proudly celebrated the 2nd Edition of the North America Pastry Championship, held on June 28–29, 2026, at the Javits Center in New York City during the renowned Summer Fancy Food Show.

This prestigious competition brought together outstanding pastry talents from across North America for two days of creativity, innovation, teamwork, and technical excellence. This year’s theme, “USA 250th Anniversary,” challenged competitors to showcase their artistic vision while celebrating this historic milestone.

Congratulations to all of our talented contestants who competed in the second edition of the Roland Mesnier Trophy.

Each team demonstrated the highest level of pastry craftsmanship through a series of demanding creations, including a plated dessert, a miniature dessert lollipop featuring three flavors and three textures, and a final presentation composed of an artistic masterpiece, an entremets, and 18 miniature desserts.
Reflecting the future of the pastry profession, sustainability played an essential role in the competition, with all artistic pieces created using only sustainable and edible materials.
