The 4th Canadian Congress of the Académie Culinaire de France – USA & Canada brought together chefs, partners, and distinguished guests for a weekend of exceptional gastronomy, camaraderie, and cultural exchange in Montreal, Quebec. Over two unforgettable days, the event highlighted the creativity and savoir-faire of the Académiciens and Académiciennes of Canada through a series of gourmet experiences, masterclasses, and moments of genuine fellowship. From orchard lunches to gastronomic dinners and chocolate demonstrations, the congress beautifully showcased the diversity, talent, and shared passion that unite the Académie’s community across North America.
In the evening, participants gathered for an exceptional Gastronomic Dinner at Restaurant Le Renoir, hosted by Chef Olivier Perret in the Sofitel Montréal. Inspired by French haute cuisine and infused with international influences, Le Renoir captures the vibrant culinary culture of Montreal’s Golden Square Mile district. Chefs Olivier Perret and Clément Tilly presented a refined menu celebrating the harmony between French tradition and Quebec’s terroir. Recipient of two Toques from the Gault & Millau guide and recognized as Montreal’s top-rated hotel restaurant, Le Renoir offered an evening of artistry, elegance, and innovation that perfectly reflected the spirit of the Académie Culinaire de France.
The following morning, guests were welcomed to the Callebaut Chocolate Academy™ Canada, a hub dedicated to the excellence of chocolate craftsmanship. Since its founding, the Academy has supported pastry chefs, chocolatiers, and artisans in mastering the art of chocolate through hands-on workshops and creative exploration. Under the guidance of Chef Nicolas Dutertre, participants attended an engaging chocolate demonstration and breakfast, discovering techniques that blended tradition, precision, and innovation — a testament to the Académie’s mission to share and elevate culinary knowledge across generations.
The congress concluded with the elegant “Hunter & Friendship Dinner” at Portus360, located atop the EVO Tower, offering breathtaking 360° panoramic views of Montreal.
Helmed by Chef Helena Loureiro, Portus360 embodies a cuisine of generosity and life — a meeting of Portuguese flavors and Quebec terroir. The menu, inspired by Helena’s passion for sharing the tastes of her native Portugal, showcased a vibrant symphony of textures, aromas, and seasonal ingredients, paired with exclusive wines. The evening’s atmosphere was one of camaraderie and celebration, reflecting the unity and excellence that define the Académie Culinaire de France.
